Famous Traditional Iranian Dishes

Fesenjan

Fesenjan is an ancient and popular stew served at festivals and religious occasions such as Ramadan and Muharram. Main ingredients: meat (duck, chicken, lamb, or veal), walnuts, and pomegranate juice. Pomegranate symbolizes birth, life, and fertility and is widely used in Iranian dishes.

Dizi (Abgoosht)

Dizi is a traditional Iranian stew dating back around 4000 years. Ingredients include meat, meat fat, chickpeas, and beans, cooked with spices like fenugreek, tarragon, and thyme. Traditionally served in stone crocks, diners mash the ingredients themselves (“Goosht Koob”) and enjoy with fresh bread and herbs.

Qorme Sabzi

A popular herb stew served with steamed rice (Chelou). Main ingredients: meat, fresh herbs (celery leaves, parsley, spinach, dill), kidney beans, lemon juice, and dried lime.

Kalam Polou

Traditional Shirazi dish made with rice, cabbage, and meatballs. Ingredients are added separately to cooked rice, covered with a towel, and steamed gently for about an hour.

Kebab

Kebab is one of the most famous Iranian dishes, with various types including:

  • Kebab-e Koobideh: ground meat mixed with onions, saffron, and spices, grilled on charcoal skewers
  • Kebab Bakhtiyari: alternating pieces of marinated meat and chicken
  • Jujeh (Chicken) Kebab: chicken marinated in lemon, onion, and saffron
  • Kebab Barg & Soltani: premium meat strips marinated overnight and grilled slowly
  • Kebab-e Torsh (Sour): from Gilan province, marinated with pomegranate or sour orange sauce and walnuts
